They won't. The only plus is at longer ranges, not that the 7mm won't get there. You also have to realize to that the elk people live by the Weatherby code. If you don't shoot a Weatherby then you don't shoot a rifle.

I have never heard this.

My 7mm STW is pushiing 165 pills at about 3100. Now, granted, you won't get that out of a 7mm Rem, but you should be able to get 2800 all day, depending on barrel length. Now, unless you're shooting elk at 1000 yards, that should be more then enough to get the job done.

I'm NOT a big magnum guy, although I do own a few. There's been many an moose meet his maker at the hands of the lowly 6.5 swede. That's a pretty big f'n animal. just saying.
