Well, when the eagles came in and flew them out of Mordor, the orks were decimated from the earthquake or whatever you call it that happened during the final battle when Frodo threw the ring into the volcano. They would have easily been spotted if they tried to fly in there with all those things everywhere.

How do you plan on keeping these trolls watered and fed at the Crack of Doom? I think Sauron's arrogance was the ultimate reasoning... I mean he was the all seeing eye and everything plus a doomed journey in his mind to begin with...
