They didn't do the whole stadium in great detail because they weren't paid to and as you can imagine it's not cheap and Tiger Stadium is pretty detailed structure. They did do enough to make a pretty sweet graphic but not enough to really do work from.
Basically they surveyed the curve of the south endzone from about 6 angles and the data is cross referenced for precision and put into point cloud data to have an accurate and interactive assessment of the physical structure and dimensions. It took 2 or 3 days of surveying to get what was needed just for the endzone. It was done for Lamoine and used pre design and pre construction (obviously pre construction).

The north side of the stadium is nice. Have you ever actually looked at the south side? The best thing we could aesthetically do is cover it with an upper deck.

Agreed. The East and West coliseum effect arches are covered up by upper decks.
The SEZ doesn't have arches at all, it never did -just poles.
A SEZ upper could conceivably have at least a partial arch design built in.
The NEZ arches will NEVER be covered up. And this will be the showplace area for Death Valley anyway. The Roman Coliseum look with the new updated area between NEZ and the PMAC....

This is and has to be all about $$$$. The top SEC teams are in a huge arms race for money (even more so now with the addiion of aTm). All of the top teams are also top in revenues generated. LSU's rise starting around 2000 came with the east side expansion and the starting of TAF. If LSU is going to continue to compete for championships it has to add luxury boxes first and some more seats.
Unfortunately LSU cant afford to be worried about the common fan wanting to go to LSU games cheap anymore and still compete at a high level.
