If Sci-fi is your thing, then I think Ghost in the Shell or Cowboy Bebop would be a good place to start.
Cowboy Bebop is episodic by nature, with the overarching plot only being advanced every few episodes. However, it's still one of the best anime out there and I'd recommend it to everyone.
GitS is a little more convoluted story-wise, as there are two continuities in the series, but I'd recommend watching all of it in release order starting with the first movie.
If you want to include Mecha as part of the sci-fi genre, then I'd recommend Code Geass, Gurren Lagann, Macross (Robotech), and some of the older Gundam series. Also, even though it's incredibly polarizing, I feel like everyone should watch Neon Genesis Evangelion at least once.
For your fantasy fix, I'd take a look at Fullmetal Alchemist:Brotherhood, Fate/Zero, Sword Art Online, and a lot of the Miyazaki films like Howl's Moving Castle, Spirited Away, Princess Mononoke, etc.
I think that should give you a good push off the ground. Hope you enjoy some of those!

Thanks for the recommendations.
I've seen a lot of the Miyazaki films and have really enjoyed them. But after doing some reading about Cowboy Bebop that sounds like where I will start.
