Baked eggrolls
Buy the eggroll wraps, season & brown lean ground meat, onions, mushrooms, cabbage (I buy the already cut slaw mix), bean sprouts, peppers, & bag of stir fry mix. Add some low sodium soy sauce, rice vinegar, & a little honey. Stir that all together & let it simmer a little while. Dump mixture in a large stainer-mixture can't be "wet" because it will make the wrap wet & it will not cook. Spoon about 2-2.5 tablespoons of the mix into each wrap & roll. Bake for about 20 minutes. YOu can brush each wrap with an eggwash if you want. Make yourself a low cal/fat dipping sauce & you've got a good home cooked meal that doesn't taste like regular old chicken breast & veggies!
