I honestly wouldn't. If you finish cooking at 10 Friday night, I'd cover lid and just shut er down and bring out to tailgate and fire back up first thing in the AM. It will be cool enough outside to let sit for about 8 hours.

Perfect timing. I have some gator meat I have been needing to use and have been looking for a sauce piquante recipe. Thanks. This will be my first time trying a piquante. Any major do's or don't not covered in the recipe for gator meat?
