Any suggestions on which brand/model to purchase? Pros and cons are definitely welcome...thanks!

I have one, do use it some, and like it but it's hard to beat freezing something in water.
Depending on your needs they could be a space-eater in the cabinet.

Just plan to mainly use it for fish & deer...

We have one from sams and it does the job. Dont use it for trout - only tuna, snapper cobia etc.

We have one we only use for packaging deer. Fish do just fine frozen in water IMO

Why not trout? I haven't had any bad results with mine.

With meat like deer they work best if you freeze it a bit first. If not, when the meat freezes after you vac it, it draws up and leaves some space.
I use mine to do steaks to have handy for a hurricane, and veggies like small okra we like to boil.
When doing a larger quantity of meat you would have to kinda watch it so it's not frozen solid to get the best preservation, I'd think. I semi-freeze mine but maybe freezing it completely then vac packing it shortly thereafter may be okay, not sure.
Until recently I also used it to keep an extra set of bearings in my boat.
