you get a pretty good sampling of Jamabalaya's

But they are all cooked with ingrediants provided ( no secret ingediants) by the fest so there is nothing out of the ordinary.

Has it always been like that? Sounds like the type of thing lawyers and insurance agents made happen to keep the event from getting sued because someone used spoiled meat.
