Hey Stadium Rat, I used your Jambalaya Calculator this weekend and I wanted to give you a shout out!
I've had a 10 gallon pot for about 5 years, but have never cooked more than half a pot (5 lbs of rice), I just haven't had the occassion to cook for 100 people. So I used your jambalaya calculator (version 1.0) to assist me with ratios and quantities, etc. on a full pot. It was very useful, and the jambalaya came out great! Best I ever made, truth be told. I tweeked a few things of course, but the rice to liquid ratio was spot on. I keep a little less than two cups of the meat fat in the pot, so I reduce my stock quantity by that amount.
Any way, thanks for all the effort you put into the jambalaya calculator. It's a great tool and you are very generous for sharing it!

Rat, Once again great job. Wish I would have had something like this when I was learning 25 years ago. It seems just about spot on.
Just a note however.
The 15 gallon recipe seems like it would be pushing a very full pot. I usually use a few cups less of rice and about 45 lbs of meat.
Need a little room to build up steam and to be able to turn the rice.
