My favorite is zuchinni, tomato, onion, red or yellow bell pepper, and sirloin tips.
Spice it any way you like. Last ones I did were brushed with teriyaki and sprinkled with sesame seeds.

Mushrooms, they soak up the marinade well, and taste meaty. Also, good for vegetarians.
