Now add a text layer and make it the top layer.
When I make this layer the top layer, is it important to have a certain animation frame/layer selected?
What if I want different text to show up at different points... i.e. creating phrases etc as the gif animation progresses.
Am I right to assume it's just a new 'top' layer and then adjust the visibility?
I haven't tried any of this yet, but I understand the basic idea of what you're saying.
Just too hungover to give it a go right now

By default it will add the new layer above the layer that is currently selected. But you can always move the layer to the top with a drag-and-drop.

You got it. Just make sure all the text layers are above the last layer of the original GIF and you are golden.
Now, go forth and conquer...and if you need any more help, just let me know.
