because then they look cheap and what they are doing is obvious. they cant blame it on the guy being "unsignable"

It's only a dick move if they fail to offer him a contract that would be appropriate for the 28th player selected in the draft.
Lee says he wants $3 to $5 million, which implies he wants a premium to his draft slot in order to forego playing football at LSU. The corollary to that is that the opportunity to play football at LSU has a value to Zach that appears to be the delta between what a 28th pick should get and ~$3 million.
