Crock Pot Recipes

I am going to Florida in a couple of weeks with the family and everyone takes a turn cooking for the night. Looking for ideas for an awesome recipe that will top everyone else's meals that week. Doesn't necessarily have to be crock pot... Ideas???

White Bean Chicken Chili

4 cans Great Northern beans, drained and rinsed
32 oz. chicken broth
1 can Rotel
1 onion chopped

1 1/2 tsp dried oregano
1 tsp garlic powder
1/4 tsp ground white pepper
1 bag shredded Monterey Jack cheese

Bring broth to a boil, add sour cream and whisk. Add remaining ingredients and simmer about 15-30 mins until thoroughly heated. Makes 20 cups. Garnish with shredded Monterey Jack cheese, a dollup of sour cream, and serve.

NOTE: If you like a thicker and creamier soup, add some heavy cream in place of some of the chicken broth



I did this in a crockpot. I added bellpeppers and about 5 cloves of diced garlic. Added crushed red pepper/Tony's/black pepper. It was really good and cheap. Set it for about 6 hours or so.

CROCK POT CHICKEN ENCHILADAS

1 lg. can enchilada sauce
3-4 chicken breasts
2 cans cream of chicken soup
1 sm. can sliced black olives
2 dozen corn tortillas
1 chopped onion
1 pkg. sharp Cheddar cheese, grated

Cook chicken and shred. Mix soup, olives and onions. Cut tortillas in wedges. Layer crock pot with sauce, tortillas, soup mix, chicken and cheese all the way to top, ending with cheese on top. Cook on low temperature all day in crock pot.




EASSSSYYYYYYY!!! And yum. I assume if you're at the beach, you're not looking to make anything extravagant that requires lots of ingredients, so this seems simple enough.

Whole chicken seasoned placed breast down
1 chopped yellow onion
1 chopped green bell pepper
4 stalks chopped celery
2 cans of Cream of Chicken and mushroom
2 cups of chicken stock

Cook on low for 6-7 hours.
Take out chicken (be careful, very tender) de-bone and add meat back to pot.
Cook for 1 hour
Serve over rice
