Leave well enough alone IMO, they haven't even remade Chrono Trigger, what makes you think they will do another FF7?
When they did "remake" CT, all they did was add something pointless and keep the same game otherwise.

Because 2D games have a timeless aspect. They're still made today.
The harsh and jagged polygonal design in FF7 really dates it... in the same way special effects do action movies. It may look spectacular now, but as technology improves, it will just begin to look cheesy.
