It's a sign of respect to greet your sushi chef even if you aren't sitting at the sushi bar. But I always sit, speak with them, and offer a small tip in their jar in addition to whatever I tip the waitress (and a piece of that goes to them as well).

As far as take-out goes, I like sushi THAT much that I am willing to sacrifice some its quality to enjoy it. There are time where I/we just are not dressed to go and sit at a restaurant. I would much rather dine in, but you gotta do what you gotta do. I would much rather have takeout sushi as opposed to Burger King or Cane's.
