How long should I cook this for?

I have a deer backstrap that I am going to butterfly down the middle and stuff it with cream cheese and jalapenos and wrap in bacon.
I know that I should cook it on the pit, but that isnt an option right now.
How long should I cook it in the oven the way I have it?

LST quick sear it in a hot pan first and then put it in a 375-400 degree oven and finish it off for about 25-30.

Should I sear it before I stuff and wrap it?

I would wait until the bacon is on to sear, that will make bacon crispy instead of chewy..
