Sound like MASSIVE bullheads. Depending on the kind of bullhead they'd either be world records, close to world records or about half the size of a world record....which would be akin to an 11 pound largemouth bass,,,,
We used to eat them all the time and they were fine. If it was mixed bag of channel and bullhead fillets fried up most people would be hard pressed to tell the difference in them, at least in our area. I suspect that may be different depending on where they're caught. Id give them a try since they are filleted. If they ain't no good the dog will probably eat them.
