I cook very small batches for my wife pretty often.

I use a small sauce pan and add seasoning liberally. Get to a boil, add the shrimp and cut the heat off around 2 minutes. It barely gets back to a boil before I'm finished.

Dump some ice in and let them soak for 15-20 minutes.
