The key is knowing your child's potential in the various subjects and judging them against that not some amorphous level of perfection. It is no different than judging them on their athletic performance. Not every kid has the potential to start for their high school team just like every kid has the potential to get an A in AP Chem. It is hard enough to get a child to perform near their potential, at least in something they don't have a true passion for, but expecting performance above their potential is both impossible and destructive.
