Here's the recipe I use. I think it's important to dice the chicken and not shred it. I believe the texture is better.
I typically grill the chicken or roast it over wood (not smoke, that's too heavy).
4 cups diced chicken breast or boneless/skinless thighs.
1 stalk celery diced
1 bunch or a little less of green onion or 1/2 cup diced sweet onion.
1/2 tblsp dried tarragon and 1/2 tblsp dried dill
1 tblsp dried parsley
1 cup mayo
1 tbsp lemon juice
1 tblsp Dijon mustard
Black pepper to taste.
If you're salting/seasoning your chicken prior to cooking, then leave this out.
A little more than 1 cup of firm, sliced red grapes or diced apple
