The only way LSU could defend Clark was to assign Johnson to cover her tightly before she got the ball to limit her # of shots or passes she makes. After she catches the ball she either scores or gets fouled.

Well, essentially thats what they did. Guarded her to try to stop her from getting the ball. But Clark knows how to come off screens and is just too quick for that most of the time. In high school I was always assigned to the other teams best shooter, and usually did very well. Unless, the other team was very good in screens and the other player was as quick as I was. Then, it was what you see happened with Iowa.
