I fry catfish for 115 people each year. I buy 35 pounds and always have leftovers that we box up for people to take with them.
To be fair, we serve fries, hush puppies, slaw and something like shrimp and grits or shrimp creole with rice along with it.
If the filets are large, I suggest you slice them into 1/2s or 1/3rds. A lot of people will only take a piece or two if there is plenty of other food available.
