I used to work for a company years ago that was initially back by the...ummm...how do I describe it...a "very tight group of Italians".
We ate at some amazing Italian restaurants off the strip that they absolutely swore by. This was a while back, and I have no idea if they're still around, but if you find some Italian joints that have been there 20+ years, then go there.
