For this flight, SLS is behind on the construction and certification of the vehicle. They wanted to get away from the ICPS (Interim Cryo Prop System) second stage but that fell through and they had to use another ICPS that ULA designed/built. They are gonna run out of those engines/modules QUICKLY. Next SLS have different upper stages and those all have to be certified. Heck the only common parts are the core stage and the SRBs. Above that it gets different for man vs cargo module.

The most logical thing at this point would be to use SLS until the engines and parts run out and hand the whole program over to Starship. Use what you already have built because you've already paid for it and then move on to the better and cheaper system.
