I've picked them that size and let them get a lot bigger. I picked a 4 footer last year and grilled strips of it or threw in the air fryer. From what I've read you can treat them like any other summer squash as far as cooking if you pick them before the rind hardens. I let two or three harden off and cooked them the same as butternuts or other winter squash. They weren't bad but the flavor wasn't as good as a butternut or candy roaster.
This is from last year, they were great at this size.

Your squash tunnels are looking awesome. I need to invest in legit cattle panels. Right now I'm using a mix of welded wire mesh and old chain link gates I found on the curb.
