Holmes Creek area between I10 and Panama City is awesome. A bunch of beautiful natural, blue springs. Some great kayaking/paddle board/canoeing to be had, and some neat state parks in the area like Florida Caverns State Park, Falling Waters State Park, Econfina Water Management Area, etc. You can even hit Blackwater River State Park in between NOLA and there.

The problem with living on the coast is instead of 360 degrees of travel options by car you only have 180* or so. So yes fewer options OP, and the geography in the south is not as diverse as some other areas for sure. It is what it is.
