I would think just about anything used to season the oil would burn and get bitter tasting long before you were done cooking whatever it is you plan to cook.

Put a peeled onion in it, it's "supposed" to keep the oil from burning and I can taste the onion is it when I fry. Smells awesome too and pull it before it burns for a snack.
