I do make killer hush-puppies, beignet’s, bread pudding, fried okra, gumbo, jambalaya, red beans & rice, etc. Those are easy.
What I miss is GOOD smoked sausage, and a GOOD boiled Louisiana seafood boil: e.g. large gulf shrimp that tastes like the ocean, big sweet and tender blue crabs, stone-crab claws, corn halves, red potatoes, and sweet onions.
I miss that zippy burn on my lips that pairs well with a super-cold beer.
I can purchase the above non-Louisiana sourced generic ingredients up here in MA., but it ain’t at all the same thing.
