Has anyone ever made one before? Any tips or recipes I should know about? I don't really bake, but I have a lot of apples so i figured i should give it a try.

Apple pie is very easy but can be time consuming.
The type of apples you have can determine how the pie tastes. But honestly, any kind of apple will taste good if you have a good recipe.
Here's a link for a great pie crust recipe. Crust
This crust is very flavorful!
If you want to be fancy you can do a lattice top crust. Lattice Top
Here's a good recipe for the filling. Filling I like to make my pie filling a good 6-24 or so hours before baking. I just cover the filling and keep it in the fridge. That way the mix has time to soak into the apples.
And here's a hint... pie is not so hard that if you mess it up a little bit it won't taste good. It's very forgiving.

My MIL uses Northern Spy when in season (they live up north). For down here, with a generally limited selection, nothing but Granny Smith.
