It’s so damn hard to pick this one because you can debate for a ton of one “moment” standout plays with a lot of players.
Some more obscure ones I can think of where a player is really known vividly for one/two plays are:
Logan Stokes
Cole Tracey
Jonathon Zenon
Mason Taylor
Keith Hornsby
Darrell Mitchell
Kavell Bigby-Williams
DeAngelo Peterson
Jasmine Carson
Drew Alleman
Some more obscure ones I can think of where a player is really known vividly for one/two plays are:

I don’t recall Deangelo Peterson’s moment.
I remember Tracy and zenon hype.
For me the biggest athletes that I think of are the selfless and unlucky ones, Travis daniels blowing his redshirt for a single game to support the team and just absolutely shite down the nations #1 wr for the sec championship or bowl game I don’t remember. But it was Tennessee and we shut them down, that was when it became gospel that Saban defense and philosophy was the real deal.
Then the other dude is Ben Wilkerson and what could have been. Love that he came back for his senior year but damn.
Another guy on the same line as Wilkerson who I though was a sure fire too 10 pick but from another team was tying protho what a freak
