This would be the boat to get. Lots of room, shallow draft. You wouldnt need to upgrade unless you start getting mad at the trout and want to chase them on windy days.
I have a poling skiff, and it was my only boat for 6-7 years. I've done almost everything in it, weather pending, but the room for a family is severely lacking. A big wide higher sided boat would be perfect.
I would say get a 18-20 ft bay boat, but if you want to chase shallow water reds like you do in the kayak, a bay boat wont cut it. Those wide aluminum boats draft less than my skiff.
As far as the poling platform, just stick an ice chest on the front and back. Poling is cool and all, but I rarely actually pole,its not that easy. I t-motor 90% of the time.

Where I fish (NW Florida) poling platforms get used as much as the average F250 pickup truck bed. I'll probably get one as a just in case, but I don't see them used much at all when I'm kayak fishing.
