I would buy a 12" fry pan/skillet SS, 12" SS saute pan, 10" non-stick (I would buy anodized aluminum for my NS) for cooking eggs, 3.5 or 4qt sauce pan and 2 qt sauce pan w/ lids (both clad SS - def no need for non-stick) and a good sized pasta pot/stock pot - no need to spend a lot on this piece. That'll cover your bases.
I just put that together on Amazon with Demeyere for the SS stuff with a Scan Pan hard anodized non-stick skillet and it came to $759 without the large stock pot/pasta pot which you could def go cheaper on as no need to be clad up the sides, so pretty close to OP original budget. Hope this helps just to give you an idea.
I would also want a 12" black cast iron skillet and a 7qt enamaled dutch oven if you don't already have those.
