If you ask me, it is a bit more responsive (probably splitting hairs), cooks extraordinarily evenly, and as I mentioned the welded handle having no rivets on the inside of the pans is a big plus for me. I also like the French Skillet shape better over the regular All-Clad fry pan shape.
The Demeyere pans I have are 5 ply, so even if it comes to temp a tad quicker, its not prone to scorching, burning, uneven cooking, etc. I'm gonna add that All-Clad D3 is also quite respoinsive and you really can't go wrong with it either. Cooks Ill consistently ranks the All-Clad D3 its top choice for SS skillet every year.
I'm gonna add that I don't love the idea of buying sets as inevitably there are some pieces that you don't get a lot of value out of. I have mix/match stuff, but we don't keep ours out on racks, its all in cabinets.
All-Clad has something called All-Clad VIP factory event where you can get "seconds" for less - sometimes it is simply damaged packaging, sometimes its the actual pan, but it tells you in the description. Search it up and sign up and its a good way to accumulate pieces for less if you are so inclined.
Amazon has a Demeyere store where they offer the Industry 5 line, which IMHO is the best value prop for that brand.

Family of 4 at the least so a lot meals that have rice or pasta that go with them.
