Ice Maker - Low Ice Production

I have a three year old undercounter Hoshizaki Ice Maker (C-80BAJ) that has recently started making very little ice. The machine will run for extended period of time and will not produce much ice, maybe a few pounds per day. It's rated at 80 lbs per day. Mechanically, everything seems to be running/working okay, as in the extruder head, motor, etc. all seem to operate smoothly and the ice it does produce seems fine.

I shut down the machine down and cleaned and descaled it per the cleaning procedure (as I do every 6 months). After this did not help, I checked the inlet water filter and bypassed it to determine if it was a water flow issue. Also, no change.

Reading the manual, there's an inlet water screen on the machine itself I'm going to check when I replace the filter and connect it back.

Any thoughts on what could be causing it or how I can fix it?

Can you access the coils and vacuum off any dust that may have built up on it? There is probably a cover at the bottom on the front you can take off to get to the condenser coils.

It is either the coils or the water valve.
I have dealt with both on my GE's.
I am not rich enough for the Hosizaki

Just to follow-up on this.

I opened it up last night to check the screen. It took some digging into it, but the screen was clear.

So after that, I decided to open it all up and see what could be causing it. The reservoir had some scale, so I figured the tubing going to the extruder was also plugged. A little surprising since it has an inline filter AND the screen upstream of this point. Took it all apart and confirmed the scale in the tubing and drip tray. Got it all cleaned up and clear.

Also checked the coil and found some fouling, so cleaned it off as well.

Put it all back together, plugged in and hooked up with a new filter. Let it run all night and woke up to a full bin of ice.

This circled section had some loose scale and fouling.
