You absolutely keep your license plate.
Be sure to cancel the plate/registration on the La DMV website when you drop the insurance

When my husband was handling his late sister's estate, he and her daughters sold her car on Craig's List and didn't remove the tag.
It was a hassle, but once we had turned the car's number over to the DMV, and once they recorded it, then we could safely cancel the insurance.
TPTB were very understanding because of a death in the family, but Tennessee has always been easier to work with than Louisiana ever was.
