Wife, toddler & I tried a return trip (along with Bruges) in April 2020, but Covid nixed it for us...
Depending on your length of stay, visits to the Rijksmuseum, Van Gogh Museum & Anne Frank Huis will likely all be worthwhile. Book tickets in advance, especially for Anne Frank Huis.
I'd argue much of your time should be spent on two wheels. Mike's Bike Tours does a great countryside bike tour that gets you out of the downtown area stopping at windmills, cheese farms, etc. Vondelpark is a great spot to spend an afternoon or two relaxing whether you've had edibles or not.
Your timing is also perfect for the tulip gardens at Keukenhof which was going to be a treat for my wife & little one. Only open March-May.
Other eat/drink spots we enjoyed were:
Tales & Spirits
Whisky Cafe
Brouwerij t'IJ
Cafe de Wetering
The two AirBnb's we booked in 2014 & 2020 aren't showing up on the site anymore so no help there unfortunately, but spots near Leidseplein, Herenstraat, or in the Jordaan area are all good choices.
