We spent President's Day weekend there a couple of years ago (2021) and enjoyed it.
Ate at Draper's (just OK -- kid loved the ice cream), the Fusion place in the casino (good, but overpriced for the portions IMO), the steakhouse (also good), and the Forum (our favorite -- loved the stuffed peppers served in the cast iron pan). Had planned to dine in town but it snowed that weekend so we never left the resort. Had breakfast in the Dining Room each morning, which was good.
Our daughter was still "12 and under" then and really enjoyed the kids club. They did scavenger hunts, ice skating, bunker tour, art, horse stables, etc.
My husband and I were looking for a low-key weekend, so we just did the regular bunker tour, plus a tour of the resort. No spa or other resort activities, so I can't comment on those.
As a family, we did an escape room, watched a magic show, saw a movie, swam in the indoor pool a ton, played in the arcade, and went to church in the little chapel on Sunday morning.
It was a good getaway, and I thought it was a great value. We took advantage of a President's Day promotion -- I think it was buy 2 nights, get 1 free, free daily breakfast in Dining Room, and free kid's club. There weren't many people there at all in the wake of COVID, so I don't know whether those types of promotions are still available.
If you have any specific questions, let me know.
ETA: The Homestead Resort in VA isn't far away so the two are often compared. We went to the Homestead this July, and all 3 of us preferred the Greenbriar by far. We found the Homestead's offerings to be greatly impacted by COVID, lack of staffing, construction, whatever, but dining, bars, and activities were really limited in mid-summer 2022 in a way that did not compare favorably at all to Greenbrier in mid-winter 2021.
