Lentil soup
1 lb dried lentils
1 large onion, diced
2-3 celery stalks, diced
2-3 carrots, diced
14 oz can crushed tomatoes
1/4 cup olive oil
12 cups water
1 T dried oregano
1/4 t crushed red pepper
Salt and pepper
Saute vegetables in olive oil over medium heat until onions are translucent.
Add everything else and bring to a boil. If you have beef, chicken, or vegetable bouillon, feel free to add some.
Cover and reduce to a simmer for 45 mins. Adjust seasoning and serve with good bread. The soup is also good with a splash of red or white wine vinegar.
Assuming you have the olive oil and spices on hand, this will serve 8+ people for next to nothing.
