I liked working for him because I felt like he had my back, even if he could be a dickhead (not many head chefs arn't). His recipes were solid and although he might not have been the best cook, he is a great personality. Used to love it when he'd walk into the dining room and start rattling a wine glass with a fork to get everyone's attention. The dude just knew how to entertain and enhance the place with his personality. Opera singers on weekends were cool too.
