Here's the recipe for the Crawfish Pie. I did not saute the celery and cream separately....just sauted the trinity and blended the cream after the veggies softened. Also,I added garlic to the recipe, used Tony's as the base seasoning('til the salt was right), and I tempered the egg with some of the mixture before folding it all in. Turned out pretty good.Lastly, I didn't add the green onions or the parsley until just before I took it off the stove to pour up. Have fun.
