I do a six night marathon of the extended editions, watching them in two hour segments.
The extended edition of The Two Towers is a vast improvement over the theatrical release. Of the three, it benefits most from the additional material.
Fellowship is the best of the three, but ROTK earned every Oscar it won that night. I remember watching the ceremony thinking, “Holy cow! They’re going to win all 11 of their nominations!” It would have broken the record had Sean Aston been nominated in the Supporting Actor category like he should have been…

Yeah, it was a big mistake to leave out the flashback at Osgiliath since Faramir simply comes across as a dick in the theatrical release while you very much understand him in the Extended Editions.
