For me, it's hard to beat Moby Dick or any of James Fenimore Cooper's works.
Quick edit: There's a Thomas Hardy novel, The Return of the Native , read by the late Alan Rickman that's about four hours long. LINK

Robinson Crusoe narrated by Gordon Griffin.

ETA: Of all the books I used to listen to on my (13 hr) flights to Honolulu, that one was my favorite.
