I loved Infinite Jest despite the disappointing ending.
I'll nominate Dan Brown because I felt so let down by the end of The Da Vinci Code. I'm not saying it was great literature, but it felt like he stopped with 50 pages to go and said, "Now how can I make this into a movie?"
