re: Smoothest Coffee Suggestions - bbqguy
If you already have a k-cup brewer, doing your own k-cups are the way to go. I found the Perfect Pod E-Z Cup brewing system with disposable paper filters are great. You can choose whatever coffee you want and switch up until you find the one you prefer. I find the refillable cups and paper filters a...

re: Reverse seared pork chops - bbqguy
[quote]Never reverse-seared pork chops but if I had some 2" thick ones (not stuffed) I'd give it a try. I'd set up an indirect section on my pit and get the temp around 250. Throw in a couple of apple chunks and let them go until the internal reached 140. Pull them and raise the coals and leave the ...

Reverse seared pork chops - bbqguy
I have 4, 2" thick porterhouse pork chops ordered for tomorrow. I want to try the reverse sear method to cook them for lunch on Sunday. I've had great results using this method with rib eyes cut 1 1/2" thick. Anyone ever try this with pork chops? I would like to hear if you have any experience do...

re: How does OT like their coffee? - bbqguy
River Road Creole, medium dark roast brewed in a Keurig. I use the EZ Pod brewing system with the disposable paper filters. Never use water system water, only reverse osmosis filtered water. Excellence cup of coffee, fresh and never bitter. No need to use cream and sweetener as that would mask th...

re: Drew has all the leverage.... - bbqguy
This happens every day in the real world. If you were in Brees's shoes, would you not go for as much money as you can get? The Saints have profited immensely from Drew's talents while he has been here. Let Drew make everything he can in the remaining years of his Hall of Fame career. He'll be gone ...

re: When do u add jar roux? - bbqguy
I made my own roux for years and never had a problem. I got caught in a time crunch cooking for a hastily planned supper one night and got talked into using the jarred roux instead of making one. The resultant gumbo was fine and everyone enjoyed it. Now I use it religiously for every thing that call...

re: I'm guessing this is Cajun rice and gravy? - bbqguy
I season a roast 24 hours or longer before cooking. The seasoning works its way into the meat by osmosis. I've never heard of cutting a roast up after browning, but judging from the video, it looks like it works. I may try it with my next chuck roast....

re: I hate crawfish, am I the only one? - bbqguy
I've lived my life in Louisiana and have eaten crawfish as long as I can remember. That being said, boiled crawfish once a year is enough for me. On the other hand, I'll eat oysters any and every way you can prepare them. They are far and away my favorite seafood....

re: Do you normally carry a pocket knife along with your change and keys? - bbqguy
I have been carrying a pocket knife since high school. It feels like I dressed incorrectly if I don't have one in my pocket. I carry a three blade Case that was given to me years ago by my wife. ETA; A knife is a useful tool, just like a gun. It is no better or worse than the person using it. ...

re: Aeropress help - transitioning to unsweet coffee - bbqguy
If you have been drinking Community for years, try the River Road Creole medium-dark roast. Like you, I drank Community Dark for over 40 years. I find the River Road to be a better cup of coffee. It's smoother than the Community, less bitter....

re: What is your favorite Community Coffee brew? - bbqguy
Do yourself a favor, skip the Community and find the little gold bags of River Road. Much better flavor, never bitter. I switched from Community Dark Roast and couldn't be more pleased. I drink the med-dark Creole blend. Great cup of coffee!...
