Favorite southern side dish?

I know the south has many incredible side dishes.
Lots of variations depending on the region.

My favorite, and what I consider very underrated, is squash and onions.

Yellow neck to be specific

Both of these are correct, and you can end the thread. Fried okra and fried yellow squash.

my grandma used to thinly slice onion, tomato and cucumber and mix it with oil and vinegar and lots of pepper. it was delicious.

Homemade macaroni and cheese. My (now deceased) neighbor's recipe to be precise. She made it exactly once a year for when we worked the cattle on their farm. After working a dusty Saturday morning worming/castrating calves, we'd go into her kitchen for an epic spread, the highlight of which was (for me) her macaroni and cheese. Thankfully, my mom was able to get the recipe, and it lives on in my own cookbook.

This. My mom made this growing up. Sometimes she'd get lazy and just use italian dressing. Still damn good during the summer, especially with maters and cukes from the garden.
