She sounds like a bitch. Celiac disease is real, gluten sensitivity is likely just a misrepresentation of irritable bowel syndrome. Here's a link. LINK

my girlfriend is glutent intolerant and is in great shape. I doubt there are many fat people who are glutent intolerant, because they don't ingest the carbs us normal diet folks do.
She can have gluten sparingly, but if she went and had pizza 2 nights in a row like that. Yeah....she'd feel like ishh for a few days.

People with gluten issues, peanut allergies, diabetes and such need to not have children. If they keep spreading the beta genes, a terrorist can wipe us out with a cookie bar or two.

The more and more research is done, the more evidence there is that gluten intolerance is a fraud condition.
It follows the general formula for a medical scam. You take a real, life threatening medical condition, celiac disease in this case, and slightly modify it so you can sell books and products based on the subject and all the gullible retards in the world will buy into it.
I've seen the same thing happen with Addisons disease and a related made up condition called adrenal fatigue.

Agreed. There are some cases where people don't have Celiac and are allergic/intolerant to gluten. My cousin is one of them. The rest are just fricking hipsters being smug and pretentious. They make up some damn story for needing to be gluten free instead of just saying it is a diet they'd like to try.

I can say this. When I follow the "Wheat Belly" diet (low carbs and no wheat), I feel better, lose weight and my measured blood sugar decreases. When I replaced wheat with "gluten free" substitutes, my blood sugar pushed into prediabetic levels. Eliminating wheat, most other grains and eating vegetable based substitutes, I was in the clear on blood sugar measurements and lost 30 lbs. I'm not celiac, but I am a believer that modern wheat is the main reason for our diabetes explosion. TIFWIW.

Our food is what is making us sick these days. It's a sad state of affairs.

Gotta love the people who think they or someone they know is "gluten intolerant."
I guess there will always be a spot for snake oil salesmen in this world.

Gluten allergies are more common now due to all of the crap we eat in processed foods and the fact that most people now grow up in urban or suburban environments with air conditioning, meaning that their bodies are exposed to far fewer allergens on a daily basis than previous generations. This means that their bodies do not learn to deal with as much.
It has been proven that statistically, the more one lives outside, the fewer allergies they will develop. That is why the Amish (when tested) are among the least allergic people in the world (there's a small subset of Swiss people in the Alps that are number 1). The more you're exposed to as a child every day, the more dirt you eat, pollen you breath in, ect, the fewer allergies you develop.
However, once one has a gluten allergy, it's no joke. My SO's mom has it, and it is rough. She can't eat pizza, bread, cookies, or pasta. She has to get special gluten free pasta and cookies. She can only eat pizza from Mellow Mushroom because they offer a gluten free crust option. She also has to watch what kinds of alcohol she drinks and generally has to stick to wine.

I know right? I love when people think they have cancer and then "go get chemo".

gluten intolerance is not a real thing
Celiac disease is a real, serious issue for a small part of the population.
Gluten intolerance is based on junk science and anecdotal bull shite. The authors of the original study that lead to most of this fad conducted a follow up study that essentially refuted their original conclusions.

You are eliminating simple carbs. This is nothing new. Ever heard of the Atkins diet? Sugar busters diet?
You quit eating junk food, lost weight, and feel better? Riveting.
