Upscale seems like the very antithesis of good BBQ.

BBQ is a modern day American peasant food. Ultra high quality ingredients will not result in a higher quality product. It is all about simple ingredients, time , and technique.

Their is a place in Dallas called Smoke that borders on upscale. They still embrace the "hominess" thing but the chef comes from a fine dining background and so things are more "chefy". That and some good ol' Dallas pretentiousness go a long way towards upscale.

lol was coming here to post this. its a really good place, I like going when work pays

its not upscale but the new trend is "hill country tx bbq style" and its very $$$. its where they just weight the meat and you pick it out from the pit and that shits expensive.

its damn good but it averages $20-$25 a person with sides and a drink

Jack Stack in Overland Park, KS is fairly upscale. I mean, it's not like Jean-Georges or anything, but it's nice. Food is quality, though it's not the best Q in KC, imo.

I feel like bbq is bbq and there ain't much to it. What would make it more upscale are the things that go with it. Sides and drinks and whatnot.

I was going to say this as well. Really nice place in downtown Austin. Had an amazing meal there this past summer. Sat at the bar. Bartenders made us a bunch of good cocktails and the kitchen just sent us out different plates of stuff.

Sounds like a gimmick to charge people a lot of money for inexpensive food.

I like my BBQ sloppy and smoked in a 60 year old smoker that is full of grease and grit and fat drippings.
