Favorite Vietnamese meal

I'm a Bahn Mi/Pho Ga guy, myself, but I'll have the rare opportunity of a home-cooked Vietnamese meal from a Vietnamese chef. What should I ask him to prepare?

Pork spring rolls and a bowl of combo pho is how I initially judge any new Viet place at which I dine.

Yeah, that would be a good start. He's making some broth right when he gets in, so the Pho is a done deal.

No doubt, but he asked me to have something in mind. Just wondering if anyone has ever branched out more than I have and has a good suggestion.

Along with the short ribs, all a staple in daily Vietnamese household cuisine.

Pho and the bun bo hue take hours to make and the stuff made at the restaurant is just as good one made at home. I'd go with the ones up top.

I like canh chua but no way the gringos will dig that upon first tasting. It's an acquired taste IMO. Stick with bun bo hue or pho. I'd also recommend banh xeo which is basically a Vietnamese egg flour crepe eaten with fish sauce.

One of my personal favorite is bo luc lac (seared cubed beef). Hard to find a decent one in town but the old pho quynh used to have a good one. Not sure if they still do after the ownership change.

I'm a Bun guy

I like the Bun with eggrolls and beef, but the shrimp wrapped sugarcane is good too.
