I've been eating canned tuna my whole life. I've had good and bad cans from all the brands I've tried. They all taste good, but sometimes you just get a fine debris. It's good when you can see actual flakes or better yet, you get to flake it yourself.
I don't think it has anything to do with brands. i think it has everything to do with luck, i.e., it depends on where that particular packer is on the fish. At the beginning you get the good stuff. At the end the person is packing in all the leftover debris.

Kirklands canned Tuna from Costco is on another level compared to starkist.

This stuff is great. It's a solid filet that is as fresh as the day it was caught.

Now, I want a "tuna fish" sandwich. And, why did we always call it "tuna fish" growing up and not just "tuna". Tuna is a fish. I like "tuna fish" though.

There is plenty of fish-farmed tuna. If you visit Italy's Amalfi coast, you can see the big, floating offshore enclosures near Sorrento.
FWIW, the best mass market canned tuna is Bumblebee packed in olive oil. The water packed stuff is gross. On the high end, you can't do much better than Ortiz's yellowfin ventresca: LINK But how often do you eat a $17/can of tuna?

Tuna in oil for me. Best is raw tuna boiled in water for a few minutes.

I've had the same experience. Nothing worse than paying top dollar for a can of chunky albacore only to find it has the texture of sawdust.

Whole filet, No water added. I never liked canned tuna until this.

I remember a tuna review from a couple of years ago. Whole Foods ranked very high.

Same here. Seems now more people are calling it tuna salad sandwich.
