Scotch Eggs w/pics

Woke up this morning and decided to cook some Scotch eggs. Here is what happened:
Boiled a few eggs for about 5-6 mins, got them just firm enough to peel, but you could tell still really soft in middle.
Pulled eggs and put straight in ice bath to stop cooking and hopefully make easier to peel.
I put some pork sausage, cornstarch, water, and salt in my food processor and ran it through to mix up. Figured the cornstarch would make it stick a little better, I was right. Dumped some out onto some plastic wrap and rolled it smooth.
CAREFULLY peeled the eggs using a spoon to try and go around the inside of the shell. I still tore a few of them, but hey who doesn't like a soft boiled egg? I put the peeled egg in the middle of the sausage, then just pulled up the plastic wrap to cover egg. I dredged them in flour, egg, then breadcrumbs.
and put them in the oil just to brown the breading.
Once brown I put in the over for about 10 mins to finish cooking sausage.
Whipped up some grits to serve along side.
Money Shot!
These are quickly becoming my new favorite breakfast food. Kind of labor intensive, but I love cooking so that's not an issue....just the non-healthy aspect. Let me know what you think, or if there is something I could have done different/better.

Beautifully done. It's amazing what a little care and knowledge can do to elevate a dish. My years in England wanting to enjoy Scotch Eggs has been re-awakened as I would always try them and wanted to like them- but the preparation and seasoning was just so bland and badly executed. Perfect yolk and great technique.
